Bang bang tofu skewers

BANG BANG TOFU SKEWERS
Ingredients:
1 block firm tofu, cubed
1 Tbsp corn flour
2 Tbsp breadcrumbs
1 tsp paprika, garlic, salt and pepper
1 Tbsp sesame oil
Wooden skewers (soak these in water for 15 minutes before using, so they don't burn in the oven)
Bang bang sauce:
½ cup vegan mayonnaise
2 Tbsp sweet chili chutney (or sauce)
1 Tbsp sriracha sauce
1 Tbsp rice vinegar
Method:
1, Preheat oven to 200°C (392°F) fan bake.
2. In a large bowl, toss the cubed tofu with corn flour, breadcrumbs, paprika, garlic powder, salt, and pepper. Drizzle with sesame oil and mix until tofu is evenly coated.
3. Thread the tofu cubes onto the soaked wooden skewers. Place skewers on a baking paper-lined tray.
4. Bake for 10 minutes, or until tofu is crispy and golden.
5. While the tofu is baking, prepare the bang bang sauce by combining the vegan mayonnaise, sweet chili chutney, sriracha sauce, and rice vinegar in a small mixing bowl. Stir until well mixed.
6. Once the tofu is done, remove skewers from the oven and transfer to a serving plate. Drizzle generously with the bang bang sauce.
7. Sprinkle with finely chopped coriander before serving.
Tip:
Press the tofu well to remove excess moisture before cutting into cubes
