Easy vegan pesto pasta

Easy Vegan Pesto Pasta, save the recipe down below to pull together a nourishing bowl of goodness! 🌿🌿

Ingredients:


Homemade pesto:
2 cup fresh basil
1 cup spinach
1/3 cup olive oil
1/3 cup pine nuts
3 cloves of garlic
Juice of two lemons
2 tbsp vegan parmesan (or #nooch!)
Salt & Pepper
Blended on high for two pulses!

1 cup penne pasta

Toppings:
Cherry tomato's
Pine nuts
Hemp seeds

1 cup spinach

Method:
1. Boil pasta on the stove for 10 minutes, and add all homemade pesto ingredients into a high powered blender and pulse twice.
2. Thinly slice cherry tomatoes and any other vegetables you wish to add.
3. Drain pasta and mix pesto through. Serve on a bed of spinach and top with cherry tomato's, pine nuts and hemp seeds! ++ lots of cracked pepper!
