Lemon Pepper Tofu Bites

LEMON PEPPER TOFU
Ingredients:
1 block of tofu
2 Tbsp corn starch
salt and pepper
1 Tbsp sesame oil

Sauce:
2 Tbsp soy sauce
1/4 cup lemon juice + rind from half a lemon
1/8 cup maple syrup
1 tsp cornstarch (mix with 1 tsp water before you add in)
Cracked pepper and salt to taste

Serve on:
White rice with spring onion and sesame seeds

Method:
1. Press tofu to reduce its water, and slice into 1cm cubes.
2. Toss in a bowl with salt, pepper and corn starch.
3. In a medium sized fry-pan, add sesame oil and bring to medium heat. Fry until tofu is golden.
4. On a medium heat, move the tofu to the outside of the pan and pour all sauce ingredients in the middle, stirring well to thicken.
5. Serve on white rice and garnish with spring onion, sesame seeds and black pepper.
