Olympic Village Chocolate Muffin Recipe made plant-based

I’ve re created their rich, indulgent flavour with a perfect balance of vegan dark chocolate, plant milk and coconut oil. Packed with vegan chocolate chunks, these muffins are a champion's choice for a sweet treat. Recreate the magic of Paris 2024 in your own kitchen and enjoy a taste of victory! OLYMPIC VILLAGE CHOCOLATE MUFFIN πŸ₯‡

Ingredients:

  • 1 ΒΌ cups flour

  • Β½ cup white sugar

  • Β½ cup cocoa powder

  • 2 tsp baking powder

  • 1 cup oat milk

  • Β½ cup melted coconut oil

  • 1 Tbsp apple cider vinegar

  • 1 cup vegan chocolate chunks (two types)

Method:

  1. Preheat the oven to 200 degrees Celsius, fan-bake.

  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, and baking powder.

  3. In a separate bowl, whisk together the oat milk, melted coconut oil, and apple cider vinegar until well combined.

  4. Fold the wet ingredients into the dry ingredients, stirring until just combined.

  5. Gently fold in the vegan chocolate chunks.

  6. Spoon 1 tablespoon of the mixture into each lined muffin tin, add a chocolate chunk, and then top with another tablespoon of the mixture.

  7. Bake for 20 minutes. Serve warm.
