Tofu ‘fish’ burgers

With a crispy crumb and tangy slaw, this homemade delight serves two and promises a satisfying, plant-based twist on a beloved favourite.
TOFU FISH BURGERS - EASY RECIPE
Serves two.
Ingredients:
2 x white burger buns
200g firm tofu
Wet mix:
1/3 cup soy milk
Juice of a lemon
Crumb:
1/3 cup wholemeal breadcrumbs
4 sheets of nori
1 tsp onion powder
1 Tbsp sesame oil
Shredded cabbage, carrot and onion slaw
Vegan mayo
Pickles
Method:
1. Slice the tofu into two patty-sized halves, then cut diagonally to create small scale-like cuts.
2. Pour the wet mix ingredients into a shallow dish and soak the tofu for 3 minutes.
3. Once soaked, coat the tofu in the crumb mix.
4. Heat a frying pan on the hob with a dash of sesame oil and sear the tofu patties on each side until golden, about 2-3 minutes per side.
5. Toss the slaw salad in vegan mayo, adding lemon juice.
6. Assemble the burgers with slaw, tofu patty, pickles, and vegan mayo.
