EASY VEGAN ANZAC BISCUITS
Ingredients:
Dry:
1 cup oats
1 cup white flour
1 cup shredded coconut
1/4 cup brown sugar
Wet:
1/2 cup melted vegan butter
1/4 cup maple syrup
1tsp vanilla essence
1/4 tsp baking soda
2 Tbsp boiling water
Method:
Preheat the oven to 180 degrees fan-bake and line a tray with baking paper.
Put all your dry ingredients in a large mixing bowl, making sure to sift in the flour & sugar.
Mix your wet ingredients in a separate bowl.
Combine baking soda and boiling water, leaving to dissolve, and then mix into your wet batter.
Fold together the wet & dry ingredients before scooping the batter into 1 Tbsp-sized rounds and placing them on your baking tray. Flatten with a fork and make sure to leave gaps between them as they will expand!
Bake for 15 minutes then place on a rack to cool until firm.
For an additional touch, dip in melted chocolate & sprinkle with shredded coconut flakes.
