Spinach & ‘Ricotta’ stuffed pasta 🌱
@savournz kindly sent me some of their new vegan cheese to try and it blew my mind 🤯 ‘Cotta is a #crueltyfree take on ricotta/cottage cheese and it’s bloody delicious 🤤 Send it to a #vegan cheese lover who needs to try this!!

COTTA STUFFED SHELLS RECIPE:
Ingredients:
Large Pasta shells
Small brown onion
Can of crushed tomato’s
Salt & pepper
1 tsp paprika
1 tsp cayenne pepper
1/2 tsp coriander
2 tsp crushed garlic
Filling:
2 cups baby spinach
Lemon
1 Tbsp olive oil
4 Tbsp cotta @savournz
1/4 block of firm tofu
Salt & pepper
Chilli flakes
Method:
1. Pre heat the oven to 190degrees.
2. Cook the pasta shells until al dente (you don’t want them too soft as they’ll be tricky to fill!)
3. Dice a small onion and fry in a hot pan until translucent.
4. Add in canned tomato and all spices/garlic.
5. Reduced to a medium heat and leave to simmer.
6. Place all filling ingredients in a high powered blender and blend until smooth.
7. Rinse pasta and stuff shells with spinach mix. Place on top of the tomato sauce in a oven proof dish, add more cotta on top and bake for 10 minutes.
8. Serve sprinkled with chilli flakes & a side of greens!
