Blueberry Apple Bircher - the perfect on the go breakfast! 💘

Topped with frozen @sujonberries @bcblueberries that soak into the oats to make a naturally sweet goodness! Save this recipe to make for an easy breakfast this week 🥰

When I was growing up, my mum would make a delicious bircher, set overnight in the fridge for us to have before school. It's the perfect easy meal prep if you want something nourishing, that takes very little time! This is my take on my Mum's recipe :)(thanks Mum!!)

BLUEBERRY APPLE BIRCHER RECIPE:
2-3 servings

Ingredients:
1 cup rolled oats
1 grated apple
1/2 cup coconut yoghurt
1 cup oat milk
1 tsp maple syrup
1 tsp cinnamon
Juice of a lemon

1/2 cup frozen @sujonblueberries

Method:
1. Mix together all the ingredients (minus the blueberries) in a medium sized bowl, until well combined.
2. Pour into your glasses/jars depending on if you're taking this with you on the go! Top with frozen blueberries and cover with compostable clingwrap to set in the fridge overnight.
3. In the morning, the bircher will be absorbed and the perfect coconut-creamy texture to enjoy! ✨
