Jackfruit bean burritos

Making our super easy #onedishwonder of mexican style jackfruit beans burritos 💥💥

I made these last week and shared on my stories and you guys loved it, so here’s the recipe you can save and come back to! Theres nothing better than a quick to make dinner with hardly any clean up right?! 🤩

It’s also a great one to keep for leftovers and have with corn chips, mini tacos, or in quesadillas the following days!

JACKFRUIT BEAN BURRITOS

Ingredients:
Crushed garlic
Olive oil
4 mushrooms
1 red capsicum
1 onion
1/2 cup tomato paste
1 tsp paprika
1 tsp cumin

1 can of jackfruit
1 can of kidney beans
1 cup of brown rice (ok this uses another pot, but if you have microwave rice it's only one haha)
Lemon & lime juice!!

Vegan wraps
+ your choice of sauces and toppings

Method:
1. Begin to cook (or microwave) your brown rice.
2. Heat a large pan on the stove with a dash of olive oil, and crushed garlic until hot.
3. Add in finely diced mushrooms, capsicum and onion and sauté for a few minutes.
4. Next add the tomato paste, 1/4 cup of water and your chosen spices and mix well.
5. After 4 minutes, add the drained jackfruit and kidney beans. Mix thoroughly and season with cracked pepper, chilli flakes and sea salt.
6. Lastly, add in your brown rice before mixing well, drizzling with fresh lemon/lime juice and serving ontop of vegan wraps!
