VEGAN FRENCH TOAST
Ingredients:
1 loaf of vegan ciabatta
Wet ingredients:
1 cup soy milk
1 tsp chia seeds
1/2 tsp cinnamon
1 Tbsp maple syrup
1/2 tsp nutmeg
1 tsp vanilla essence

Vegan butter for frying

Blueberry compote:
1 cup frozen @sujonberries frozen blueberries @bcblueberries
1 Tbsp brown sugar
Juice of a lemon

Topping:
Maple syrup
Shredded coconut

Method:
1. Slice the vegan ciabatta into thick 2cm slices.
2. Mix together the wet ingredients in shallow bowl, leave in the fridge for 10 minutes to thicken and dip the bread until well coated. Leave to sit while you prepare the blueberry compote.
3. In a small fry pan, add the compote ingredients and leave to simmer.
4. Heat a large fry pan with a knob of vegan butter.
5. Fry on each side for 2-3 minutes. Serve the french toast topped with the blueberries, maple syrup and a sprinkle of shredded coconut.
