Quinoa satay salad with crispy tofu:
Ingredients:
1 cup quinoa
1/2 red cabbage
1 carrot
1/2 cup cucumber
1 block of tofu

Coriander
Sesame seeds
Spring onion

Peanut butter satay sauce
1/2 cup peanut butter, 2tbsp tamari, 2 tbsp ACV, 1 Tbsp maple syrup, 2 Tbsp hot water, lime juice.

Ingredients:

1. Cook one cup of quinoa on the stove, boiling with one and a half cups of water for a few minutes before leaving to simmer.
2. Meanwhile shred carrot, thinly slice cucumber and finely chop red cabbage placing into a large bowl to mix throughly.
3. Press a tofu block with a tea towel to get rid of some moisture. Then chop into small cubes and fry in a hot pan with a dash of oil and crushed garlic. Leave on a medium heat and toss until golden.
4. Prepare the satay sauce by mixing all ingredients in a glass jar and drizzling over the salad.
5. Toss all ingredients together and garnish with coriander, sesame seeds and spring onion
