Vegan lentil Bolognese

VEGAN LENTIL BOLOGNESE!
Serves 2-4 people, low cost & plant based

Ingredients:
Spaghetti
1 x small brown onion
1 x large carrot
1 x large zucchini
4 x brown mushrooms
Salt & cracked pepper
Olive oil
1 x canned cherry tomato’s
1 x canned brown lentils
A Jar or @mamias_nz sauce (the hero of this dish!!)
1 x Lemon
Garnish:
Vegan Cheese
Fresh parsley
Cracked pepper

Method:
1. Boil a pot on the stove to cook the spaghetti.
2. Dice onion, grate carrot and thinly slice zucchini. Cut the mushroom into large chunks and season with salt and cracked black pepper.
3. Heat a large fry pan with olive oil and sauté vegetables on a high heat until golden brown.
4. Add canned tomato’s and drained lentils, mixing thoroughly.
5. Stir through the delicious Mamias sauce as well as 1/2 a cup of water.
6. Reduce to a medium heat and leave to simmer for 5 minutes. Add more water and mamias if you’d like this dish more saucy!
7. One the spaghetti is cooked, drain and plate drizzled with the juice of a lemon.
8. Scoop the bolognese on top and garnish with grated vegan cheese and parsley.
