Mushroom & Lentil Shepard's Pie Recipe:
Ingredients
3-4 medium sized potatoes
1 large brown onion
2 carrots
5 button mushrooms
1 tsp crushed garlic
1 tsp paprika
1 tsp oregano
1 tsp cumin
1 can brown lentils
1 tsp marmite (optional)
3 Tbsp tomato paste
2 Tbsp soy sauce
Salt and Pepper to taste

1/4 cup oatly vegan crème
1/4 cup vegan butter

Method:
1. Pre heat oven to 200 degrees fan bake, peel and wash the potatoes before bringing to boil in a medium sized pot.
2. Thinly dice the brown onions, carrots and mushrooms before frying in a skillet with a dash of olive oil and crushed garlic.
3. Season with paprika, oregano and cumin before adding in one can of drained lentils.
4. Fry for 5 minutes before adding in marmite, tomato paste and soy sauce with salt and pepper to taste. Add 1/2 cup water. Leave to reduce until the potatoes are done.
5. Drain and mash the potatoes, adding in vegan cream and butter until your preferred consistency.
6. Layer on top of the lentil mix evenly, season with salt and pepper and pop in the oven to bake for 30 minutes. Serve topped with fresh greens and cracked pepper.
